Domaine Paradella is a 7.3-hectare vineyard located on an exceptional clay-limestone on the cliffs of Patrimonio that offers a unique micro-climate. The 6 hectares are reserved for Niellucciu and Grenach and 1.3 hectares for Vermentino. The soils and the balance of the ecosystems are the fundamental conditions for Domaine Paradella to produce great wines. Their vats are made up of thermo-regulated stainless steel, organized to optimize alcoholic fermentation.
In ageing their red wine, they are using the malo-lactic fermentation which is carried out in their new barrels. The wine that is aged in the new barrels is the Radoux Blend which will be fermented for 16 t0 20 months. This high-quality choice does not only enhance the fruit but also achieves a rich balance between the different elements thanks to the migration of oxygen through completely homogeneous oak seeds.
While ageing their white wine, they are using their thermo-regulated stainless steel tanks. They are also doing malo-lactic fermentation which allows an optimal balance to be obtained for the production of white wine which takes 6 to 8 months.
Domaine Paradella has recently joined America Wines Awards 2020 and has received a Gold award for their Domaine Paradella 2017.
