Terre di San Rocco: Ensures Persistent & Distinctive Flavours & Aromas By Using Their Classic Method

Terre di San Rocco is a small cellar, who choose the quality in favour of the quantity: for the reason that they dedicate to maintain and preserve the natural character of their wines by keeping a low yield.

The vineyards of “Terre di San Rocco” are located in Roncade, near Treviso, between the Venetian lagoon and Montello hills. An area with ideal temperatures and characterized by a high-temperature range between day and night, conditions that enhance the maturation of the grapes. In this frame, illuminated by the sun and caressed by the breezes, they cultivate White Pinot, Grey Pinot, Chardonnay, Merlot, and Cabernet Franc.

Man’s work is continuous and meticulous in the care of the vineyards, respecting the natural cycles of the plants and its fruits, in order to obtain a really natural product. In late July, the grapes are thinned out by selecting 4-5 clusters per plant with a final yield of 50 qt per ha. In this way, the grapes left on the plants will receive more nourishment from the plant and the soil itself, ensuring persistent and distinctive flavours and aromas.

Between the beginning of August and the end of September, takes place the handmade harvest with special care on grape selection: only the perfectly ripe grapes with excellent sun exposure will be picked up, placed carefully in the baskets and brought directly in the cellar, surrounded by vineyards, where the bunches are worked while they still smell of nature. This is very important to avoid a pre-fermentation. In the cellar, skilled hands make the last selection of grapes before to proceed with the vinification under controlled temperature, to maintain unchanged all the properties and organoleptic qualities.

The fining for white and red wines are made in stainless steel tanks for 12-16 months, before the bottling, while for a selection of red wine, especially for merlot, we foresee the ageing on oak barrels, giving intense and long-lasting flavours that continue over time, expressing personality and characteristics.

Terre di San Rocco is very proud about the production of Classic Method for the vinification of their wines as Pinot Bianco, Chardonnay or Pinot Grigio. The classic method is a process of producing sparkling wine consisting of wine refermentation in the bottle. In order to acquire the traditional pressure (bubbles). After a rest period, there is the phase of remuage, the bottles are placed on special stands (pupitre) that take the bottleneck lower thatn the bottom; the continuing rotation of the bottles deposits yeast exhausted (produced by fermentation in the bottle) on the cap. The follow step is the degorgement that consists of freezing the wine in the bottleneck and after that removing the cap so that the deposit pushes out by pressure. At this point, the wine is filled up either adding only wine over wine, instead of the “liqueur d’expedition” (a mixture of sugar syrup and old wine, or other alcoholic solutions), in order to allow who taste it to feel all the flavour of this classic method.

Brilliance in color, delicacy and a large number of bubbles, floral fragrances and scent of yeast, large confirmations to the taste, elegance, unmistakable hints: the classic method sparkling wine is our way to bring back a part of history and tradition of our territory.

An interview with Nichele Daniela, Communications Manager of Terre di San Rocco.

Do you already export to America? If yes, where? If no, what type of importers & distributors are you looking for in America?
We don’t export in America at the moment, but we would like to start. We are looking for importers and distributors that are looking for a different Italian Winery, with a new vision for the future. The family that runs the company is interested in presenting wines with a distinctive character, which can create a memory tasting the wines.

What is the most unique and qualitative part of your products, different from competitors?
Well, I’m totally sure that each Terre di San Rocco product is completely different from competitors, especially our Classic Method of Pinot Bianco Brut, made with 100% of Pinot Bianco, always Millesimato, that remains at contact with the yeast at least 36 months,  we believe that this vine expresses all elegance and delicacy.

When did you start to export your brand worldwide, and what is your development plan for the next years?
We started to export our brand worldwide at the beginning of 2000. Right now the moment is really not easy to plan the next years due to COVID-19, but as all the hard moment there will be an end and a  new beginning and we are ready for future.
